Chipotle adds a new protein roughly once every few years. Chicken Al Pastor is their latest, and after multiple visits across different locations: this is the most interesting protein they have ever added to the permanent menu. It changes the flavor profile of the entire bowl in a way their previous additions - carnitas, barbacoa, sofritas - never quite managed.

What Al Pastor Actually Is

Al pastor is a Mexican cooking tradition with roots in shawarma technique, brought to Mexico by Lebanese immigrants in the 1930s. Traditionally made with pork, marinated in dried chiles, achiote, and pineapple, then stacked on a vertical spit and shaved to order. The pineapple does two things: it tenderizes the meat through enzyme action and adds a subtle sweetness that balances the smokiness of the chile marinade.

Chipotle uses chicken instead of pork, which makes sense for their customer base and menu consistency. The marinade - morita peppers, achiote, and pineapple - stays true to the traditional flavor profile. The result tastes distinctly like al pastor rather than like a generically spiced chicken. That specificity is what makes it work.

How It Eats

The pineapple note is present but not sweet in a way that feels out of place. It cuts through the rice and beans without overpowering them. The heat level is moderate - more than the regular chicken, less than barbacoa. It works particularly well with white rice, black beans, fresh tomato salsa, and the Cilantro-Lime Sauce, which amplifies the brightness in the al pastor marinade rather than competing with it.

In a burrito, the moisture level is right - it does not make the wrap soggy at volume, which has been an issue with some of their proteins at busy locations. The texture holds consistently across the locations we visited.

How It Compares to the Rest of the Lineup

Regular chicken is reliable but not exciting. Steak is good when fresh. Barbacoa is the most flavorful of the original proteins but also the richest, which limits how often most people order it. Chicken Al Pastor sits in the sweet spot: more flavor than the regular chicken, lighter than the barbacoa, and genuinely distinct rather than a variation on what already exists.

For regular Chipotle customers who have been rotating through the same two or three proteins for years, this is the most compelling reason to try something new the chain has offered in a long time.

The Verdict

Order it. Try it in a bowl first so you can taste the marinade without it competing with a flour tortilla. Pair with fresh tomato salsa and Cilantro-Lime Sauce. It is the best new thing Chipotle has added to the permanent menu in years and it is worth making your new default protein.
