Cold Stone Creamery’s 2026 interpretation translates it into ice cream format. It’s the most credible American chain adaptation of the trend so far, which is both high praise and a realistic description of its limitations.

What Cold Stone Actually Did

The Cold Stone Dubai Chocolate Creation uses chocolate ice cream as the base, with pistachio pieces and kataifi – the shredded wheat-like pastry central to the original bar – mixed in using Cold Stone’s signature marble slab process. The kataifi is folded in at the end to minimize contact time with the ice cream before serving, which is how they preserve its crunch as long as possible.

It works. The pistachio flavor comes through clearly against the chocolate base. The kataifi maintains its texture longer than you’d expect in an ice cream context. By the end of the cup, some softening has happened, but the distinction between the crispy pastry and the cream is still present in most bites. That’s better than most ice cream applications of crunch-dependent ingredients manage.

How It Compares to the Original Bar

The original Dubai chocolate bar has a specific quality that’s difficult to translate: the pistachio cream filling is smooth and rich, the kataifi is intensely crispy and dry, and the dark chocolate shell provides a clean, sharp snap when you bite into it. The contrast is stark. It’s an engineered eating experience where three textures hit in sequence.

Cold Stone’s version captures the flavor combination accurately but softens the textural contrast. Ice cream format works against sharp crunch by definition. Get the Love It size (medium). The Like It is too small to get the full pistachio and kataifi distribution across the ice cream. The Gotta Have It is a lot of ice cream before the kataifi softens noticeably. Medium is the right call for getting the best version of the experience. Ask for extra pistachio if the option is available – the nutty richness amplifies the Dubai chocolate flavor profile more than any other add-on would.

Worth ordering if you’re curious about the Dubai chocolate trend and don’t have access to the original bar. Worth ordering if you’re a Cold Stone regular who wants the most interesting item currently on the seasonal menu. It’s an interpretation, not a replica, and it should be evaluated on those terms.
